- Glacé cherries = 1 cup quartered.
- Raisins = 3/4 cup
- Flour = 1 2/3 cups
- Mixed glacé fruit = 3/4 cup (or glacé mixed peel)
- Pure vanilla extract = 1 teaspoon
- Almond extract = 1/4 teaspoon (optional)
- Baking powder =1 teaspoon
- Cream cheese = 1 cup (One 8 oz.)
- Butter = 1/3 cup
- Eggs = 2 (large)
- Sugar = 1 cup
- Salt = 1/2 teaspoon
How To Make Mary Berry Fruit Cake Loaf (Step by Step Recipe)
Step 1
Preheat your oven to 325F temperature.
Step 2
In a large bowl cut the cherries into quarters and add raisins and mixed fruit, mix them all properly.
Step 3
Take a medium size loaf pan (9×5) grease it and line it with parchment paper.
Step 4
In another bowl add flour (set aside 2tbsp flour), baking powder, and salt, and mix well.
Step 5
Now add butter, cream cheese, and sugar and whisk until smooth and fluffy. Add eggs one by one, and whisk well after each one.
Step 6
Now Add vanilla extract and almond extract and beat more.
Step 7
Coat your fruit mixture with remaining 2 tbsp flour, and add in the cake mixture.
Step 8
Place cake mixture into loaf pan evenly.
Step 9
Bake it for 1 hour and 20 minutes or until baked properly. You can check by inserting a toothpick, it should come out clean.
