Ingredients
  

  • 1 Cup Glacé cherries  quartered
  • 3/4 Cup Raisins 
  • 1 2/3 Cup Flour 
  • 3/4 Cup Mixed glacé fruit  (or glacé mixed peel)
  • 1 tsp Pure vanilla extract
  • 1/4 tsp Almond extract
  • 1 tsp Baking powder
  • 1 Cup Cream cheese
  • 1/3 Cup Butter 
  • 2 Large Eggs
  • 1 Cup Sugar 
  • 1/2 tsp Salt 

Instructions
 

  • Preheat your oven to 325F temperature.
  • In a large bowl cut the cherries into quarters and add raisins and mixed fruit, mix them all properly.
  • Take a medium size loaf pan (9×5) grease it and line it with parchment paper.
  • In another bowl add flour (set aside 2tbsp flour), baking powder, and salt, and mix well.
  • Now add butter, cream cheese, and sugar and whisk until smooth and fluffy. Add eggs one by one, and whisk well after each one.
  • Now Add vanilla extract and almond extract and beat more.
  • Coat your fruit mixture with the remaining 2 tbsp flour, and add in the cake mixture.
  • Place cake mixture into loaf pan evenly.
  • Bake it for 1 hour and 20 minutes or until baked properly. You can check by inserting a toothpick, it should come out clean.
  • Let it cool down to room temperature and cut it into pieces before serving.
