- Fresh celery = 2 Pounds (cleaned and chopped)
- Vegetable stock = 1 quart
- Potatoes (peeled the potato and cut into quarters) = 1 Pounds
- Large onion = 1 (chopped)
- Olive oil = 1-2 tbsp
- Garlic = 3 cloves (peeled and crushed)
- Fresh parsley including stems (roughly chopped)
- Salt and Pepper (to taste)

Step 1
Cut celery into 1 to 1.5 inch pieces (Set aside about 2 tbsp of chopped celery).
Step 2
Take a large soup pan and heat olive oil fry onion and make them tender.
Step 3
Now add celery, stock, garlic, parsley and potato and cook these all things on high heat to boil.
Step 4
Cover this mixture and simmer for 20 to 30 minutes, make all ingredients soft.
Step 5
Remove from heat and blend soup with stick blender.

After blending soup stir in reaming (chopped celery) and serve.
