- 2 Pounds Fresh celery (cleaned and chopped)
- 1 qt Vegetable stock
- 1 Pounds Potatoes (peeled the potato and cut into quarters)
- 1 Large onion (chopped)
- 1-2 tbsp Olive oil
- 3 Cloves Garlic (peeled and crushed)
- Fresh parsley including stems (roughly chopped)
- Salt and Pepper (to taste)
Cut celery into 1 to 1.5 inch pieces (Set aside about 2 tbsp of chopped celery)
Take a large soup pan and heat olive oil fry onion and make them tender.
Now add celery, stock, garlic, parsley and potato and cook these all things on high heat to boil.
Cover this mixture and simmer for 20 to 30 minutes, make all ingredients soft.
Remove from heat and blend soup with stick blender.
After blending soup stir in reaming (chopped celery) and serve.
