Gather all your ingredients together. You’ll need pork rinds (they’re like crispy snacks made from pork skin), tomatoes, onions, cilantro, jalapeño (if you want some heat), lime, hot sauce, salt, and pepper.
Chop the tomatoes, onions, and cilantro. If you’re using jalapeño, chop it finely too. Mix them all together in a bowl. This mix will go on top of your crispy pork rinds.
Heat up a frying pan on medium-high heat. Add the pork rinds in a single layer. Let them fry until they turn crispy and puffed up, which should take around 3-5 minutes. Flip them every so often to cook them evenly. Be careful not to let them burn!
Once your pork rinds are nice and crispy, transfer them to a serving plate. Now, spoon the tomato-onion-cilantro mix on top of the pork rinds. Squeeze some lime juice over them and add hot sauce according to your taste.
