Mary Berry Potato Salad Recipe

Ingredients
  

  • 5 lb Yukon Gold potatoes (or Klondike Goldust potatoes)
  • 2 tbsp Yellow mustard  
  • 2 Cups Mayonnaise 
  • 1/2 Cup Sweet onion (diced)
  • 1 Cup Sweet pickle relish (refrigerated)
  • 4 Hard-boiled eggs  (peeled and chopped)
  • 1 tbsp Apple cider vinegar
  • 1 tbsp Celery seeds
  • 1 tbsp Fresh chopped dill 
  • 1/2 tsp Paprika
  • 3 Celery stalks (diced)
  • Salt and pepper as per taste

Instructions
 

  • Cut potatoes in quarters and boil in water with 1 tbsp salt for 14 to 15 minutes or until tender. Remove skin from boiled potatoes.
  • Take a medium bowl and mix mayonnaise, sweet pickle relish, mustard, celery seeds, apple cider vinegar, paprika, salt and pepper. Stir properly and make a creamy mixture.
  • Chopped eggs, scallions, celery, and dill.
  • Take a large bowl add boiled potatoes and dice the potatoes into half-inch pieces. Add creamy mixture and mix until potatoes are coated evenly. Now add eggs, celery, onion, and tarragon. Season with salt and pepper to taste.
  • Garnish with fresh dill and paprika. Cover and refrigerate it for at least 5 hours, your Mary Berry Potato Salad is ready.

You can store it in the refrigerator for up to 7 days.
