Ingredients
  

Chinese Coconut Chicken Recipe

  • 1 Pound Skinless Chicken Breasts  (boneless)
  • 1/4 Cup Coconut oil
  • 2 Eggs  Large Size
  • 1/4 Cup Cornstarch 

Coconut Chicken Sauce

  • 1 Can Coconut milk 
  • 1/4 Cup Sugar
  • 1 tbsp Rice vinegar
  • 1 tsp Fresh ginger
  • 1/2 tsp Salt
  • 1 Lemon /Lime Juice

Instructions
 

  • Take a medium size bowl add Cornstarch and eggs whisk properly. Cut boneless chicken breasts into small pieces and add in bowl for marinate, take aside for 15 minutes.
  • Take a large skillet over medium heat and add coconut oil to fry marinated chicken pieces. Fry chicken pieces for 5 to 8 minutes in coconut oil until tender and golden brown. Transfer fried chicken pieces to a plate with a paper towel.
  • To make coconut sauce, take a saucepan and add coconut milk, rice vinegar, fresh ginger, sugar salt, and lime juice. Cook this sauce mixture for 10 minutes, stirring occasionally.
  • Add fried chicken pieces in coconut milk sauce and stir to mix and garnish with some unsweet coconut flakes but it’s optional, Serve with steamed white rice.
