Pounded Yam And Egusi Soup Recipe

There are two parts of this dish one is Pounded Yam and second one is Egusi Soup. For making Pounded Yam we need cassava flour, ground yam, dried fish, palm oil, egusi seeds ,onion, garlic and some spices.

Ingredients
  

  • 1 Tuber yam Medium Size
  • 1 Sliced Onion Medium Size
  • 2 Pcs Maggi Cubes
  • 1 lb Boneless chicken
  • 1 tin Grinded Egusi 
  • 300 gram Frozen Spinach thawed
  • 2 Chile peppers 
  • 1/2 Cup Palm oil
  • 1 Cup Vegetable oil
  • 1/2 tin Dried fish
  • 1/2 tin Cary Fish
  • 1/3 tin Dried shrimp
  • Salt ( as per taste)

Instructions for Pounded Yam

  • Peel off Yams and cut into small pieces, now boil Yams pieces for 20 to 25 minutes until become very soft.
  • Now we will make paste of boil yams with blender. Blend boil yams in a blender for 30 to 50 seconds and make a smooth paste.
  • Make any shape of yams paste as you like, its ready to serve with soup.

Instructions for Egusi Soup

  • Take a medium size pot and add chicken pieces and dried fish, then add 2 Maggi cubes, 1 onion and some salt to taste. Now add half cup of water and boil these all things for 10 minutes.
  • After boiling on high heat, turn the head down and simmer for 15 minutes more.
  • Now blend chili peppers and remaining onion Add in ready chicken mixture and cook chicken mixture for more 10 minutes. chicken should be fully tender.
  • In blender add dried shrimps, cray fish and grinded Egusi and make powder of these all things. and this powder in chicken mixture and cook more for 10 minutes.
  • Squeeze the excess liquid from the spinach and add in mixture with oil and reaming magi’s and 1/2 cup water. cook more for 15 minutes.
  • Your Egusi Soup is ready to serve with Pounded Yam. Enjoy..
